Green lentils have a green seed coat and a yellow cotyledon.  There are 3 classes of green lentils grown in Canada.  They are:

Laird - largest size and largest market.  Consumed in Algeria, India, and South America

Richlea - medium size. Similar to most US varieties.

Eston - smallest size.  Predominately exported to Spain, Italy, Greece, and Mexico.
