
Red Lentils
Red lentils are small reddish brown seed coat with a red yellow cotyledon. The two classes of red lentils grown in Canada are:
Robin - smallest size, football shaped seeds primarily consumed in Bangladesh. These seeds are usually dehusked (outer skin removed) to promote quicker cooking and a more attractive appearance.
Crimson - slightly larger and flatter shaped seeds that are dehusked and split before consumption. Crimson are the largest market and are consumed throughout the Middle East, India, and Pakistan as a source of non meat protein.
